Text Box: Aromas of cherry, cassis, and oak unveil a core of black cherry, dark chocolate, rich earth and coffee in this single-vineyard cabernet from the calcareous soils and wind-kissed evenings of Templeton Gap in Paso Robles. The fruit was a select pick with full flavor development and toasty seeds. The grapes were fermented in small open tops and punched down by hand. The resulting smooth, gentle tannins and natural complexity are augmented by sixteen months in a combination of new and neutral French oak. Only 4 barrels produced.

Suggested food pairings ~ Cube steaks with gorgonzola mashed potatoes and orange-zested asparagus. Roast duck with an orange-cherry salsa, rib roast with a cranberry-Tequila salsa, or even just a game of strip chess in front of a roaring fire.
