American Consumers Want Wine, Food, and the Simple Life

Fresh from Dover Canyon

Easy, Elegant Recipes from Dover Canyon Winery

As customers flock to discount stores to buy inexpensive wines by the case, taking advantage of a national wine glut, they are also looking for simple recipes and tips on preparing quick meals for their family and friends.  At Dover Canyon Winery, cookbook author Mary Baker personally serves wine to her tasting room customers and answers questions regarding food and wine.

“This cookbook was inspired by my customers,” says Baker.  “Everyone asks about foods to serve with each wine, so I started listing food and wine pairings on the reverse side of our tasting sheet.  Then customers were so intrigued by the foods listed that they wanted the recipes.”

Every recipe in Fresh From Dover Canyon relies on colorful vegetables, fresh herbs, and simple preparation.  Baker has compiled a collection of her favorite dishes—all easy to prepare, delicious, and elegant—with wine suggestions and personal notes.

“I didn’t learn to cook creatively until I was thirty-four years old.  When I moved to Paso Robles and became involved in the wine community, I found myself backstage at winemaker dinners, watching chefs prepare gorgeous multi-course meals for dozens of people, while I polished glassware and fumbled with seating arrangements.  The most important thing I learned from pestering professional chefs is that proficiency in the kitchen is like a good wardrobe—if you have the basics, everything else is just color and fun.”

Cooking, grilling, and entertaining are a way of life at Dover Canyon.  In Fresh from Dover Canyon, Baker shares her experiences in Ten Easy Grilling Tips, Easy Entertaining, How to Cook Without a Plan, and other essays on food and wine.

“With my busy lifestyle, everything I make has to be either fast or easy, and preferably both,” says Baker.  “I run the office, wait on customers, and help in the vineyard and winery operations.  When friends and family drop in, I want to make them a nice meal that will go well with wine.  These are my favorite recipes because they are delicious, but easy to make.  What sets this book apart from other winery cookbooks is the fact that you don’t need Cordon Bleu training, and you don’t have to tramp through Sonoma forests looking for wild greens!”
